Sofrito

Another Venetian influence that Corfu cuisine has adopted is Sofrito, slowly fried beef mixed with garlic. Although, on this island, the locals pack in a lot more vegetables too. The use of garlic is what separates it from its Italian counterpart. Those from Corfu make sure of special garlic called 'kakavilia' to further enhance its flavor. Though this causes a rather pungent smell and unappetizing deep brownish color, it nevertheless makes the dish much richer in terms of taste and texture. Pastitsado
